Raw Chocolate with Goldenberries and Almonds

Ingredients:

1 cup chopped cacao butter chunks
1/3 cup unrefined virgin coconut oil
2-3 tbsp pure maple syrup
1 cup raw Ecuadorian GOLD cacao powder
Pinch Peruvian Pink Salt
1 tsp pure vanilla extract
1/3 cup Goldenberries
1/3 cup activated almonds


 

Method:


Step 1: line a 15cm x 20cm baking tin or Pyrex dish with baking paper and set aside.


Step 2: in a stainless steel or glass bowl over a saucepan of simmering water, melt cacao butter and coconut oil over a low-moderate heat until smooth, using a metal spoon or which to stir. Using a kitchen thermometer, ensure the mixture doesn't rise above 50•C, by doing this, the mixture is considered raw, where all essential vitamins and nutrients remain intact.


Step 3: whilst stirring misfire over the heat, add the maple syrup and combine. Now, add the salt, vanilla and cacao powder, whisking until completely smooth. Pour mixture into your lined dish and sprinkle Goldenberries and almonds over your chocolate and they'll sink into your mixture. Refrigerate for at least two hours prior to cutting into squares and serving.
