Beetroot and cacao clusters served with blueberry hemp smoothie

Ingredients:
2 cups raw buckwheat grouts
1 cup shredded coconut
1/4 cup Power Super Foods Booster Blend Recovery
1 teaspoon ground cinnamon
1/2 cup Power Super Foods Cacao Powder
1/3 cup coconut oil
1/4 cup roasted almond butter
2 tablespoons Power Super Foods Coconut Sugar
1 tablespoon Organic Chia Seeds
1 ripe mashed banana/extra 1/4 cup Power Super Foods Coconut Sugar
Method:
Preheat oven to 150 degrees C and line a 15cm x 30cm tray with baking paper.
In a small saucepan, add the coconut oil, almond butter, Power Super Foods Coconut Sugar, Organic Chia Seeds and mashed banana/extra Power Super Foods Coconut Sugar. Melt over a low flame, stirring to avoid burning. Once melted, set aside to cool for 5 minutes.
Meanwhile, add the remaining ingredients to a large mixing bowl, stirring to combine.
Add the cooled wet mixture, stirring until well combined.
Using a spoon, evenly spread the combined mixture over the tray (this will ensure the clusters bake evenly). Bake in the oven for 15-20 minutes.
Once lightly golden, remove from oven and allow to cool before breaking into chunks and sprinkling over the top of the blueberry hemp smoothie (recipe below).

Additional serving options:
Serve the clusters with nut milk, coconut yoghurt and fresh fruit.
Sprinkle on top of your favourite smoothie, or porridge (see citrus poppy seed porridge recipe)

Notes:
If using banana (in recipe), you will have softer, chewier clusters.
Store in an air-tight container for one week.

If using no banana (in recipe), you will have harder, crunchier clusters.
Store in an air-tight container for up to three weeks.


Blueberry hemp smoothie bowl

Serves 1-2

Smoothie ingredients:
2 frozen bananas, chopped into small chunks
1/2 cup frozen blueberries
1/4 cup hemp seeds
3/4 cup coconut milk
2 tsp Power Super Foods Booster Blend Digestion
1/2 tsp ground cinnamon

Toppings:
1 tablespoon almond butter
Fresh, seasonal fruit
Beetroot and cacao clusters

Method:
Add smoothie ingredients to a high-speed blender and blend until smooth.
Pour into a bowl and top with beetroot and cacao clusters, almond butter and fresh fruit.
