Quinoa Choc-Chip Mountain Cookies

2 cups of cooked quinoa
2.5 cups of quick oats
2 cups of healthy flour of your choice
2 bananas
2 free range eggs or suitable egg replacer
3 tbs of Cacao Powder
4 tbs of Cacao Nibs
1/4 cup Olive Oil
1/4 cup of Maple Syrup
2 tbs Sustainably Sweet Coconut Sugar
1 tsp ginger powder
1 tsp baking powder
Preheat Oven to 150 and line your cookie tray with eco-friendly, unbleached baking paper.

Mash bananas and eggs together with a fork, or potato masher. Add in olive oil, maple syrup,sugar and your two cups of pre-cooked quinoa, mix well.

In a separate bowl thoroughly combine all the dry ingredients together, being the flour, oats, cacao nibs, cacao powders, baking powder and ginger. Next add the dry ingredients to your wet ingredients.

Stir and combine ingredients really well, then simply using a teaspoon, drop big globs of the mixture onto your baking tray, they do not rise much, so you can space them closely together. To make them into mountains, use your fingers or spoon to make them peak up at the top.

Bake in the oven for 20 mins, allow to cool and then store in fridge in an air-tight container.
