Caramel Coconut Mousse

Ingredients:

Mousse


- 4 tbsp Booster Blends Digestion Powder


- 1 cup natural coconut yoghurt


- ½ cup coconut cream


- 2 tbsp chia seeds


- 1 tsp pure maple syrup (optional)


- Pinch of salt 


 


To Serve


- 2 tbsp coconut yoghurt


- 3-4 strawberries, sliced


- 1 tsp Booster Blends Digestion Powder 

Method:
1. In a medium size bowl, add the Digestion Powder, coconut yoghurt and coconut cream.
2. Using a stick blender, blend until the coconut cream is smooth and everything is well combined.
3. Stir through the maple syrup and salt. Taste, and add more/less as desired.
4. Stir through the chia seeds.
5. Spoon the mix into 2 serving glasses and place in the fridge to cool for at least 4 hours.
6. Serve topped with extra coconut yoghurt, sliced strawberries and a sprinkle of extra digestion powder.

Best served immediately once set, if making in advance stir well before serving.
