Ingredients:
1 cup dried mulberries (soaked in boiling water for 5 minutes)
1 cup cashews
3/4 cup almond meal
1/4 cup coconut flour
1 tbsp Power Super Foods Maqui Powder
4 tbsp maple syrup
2 tbsp coconut oil melted
1/2 tsp vanilla powder
White chocolate:
1/2 cup coconut oil
1/2 cup Power Super Foods Cacao Butter
1/4 cup maple syrup (add less or more to taste)
Method:
To make the maqui centre, add all of the ingredients to a food processor and blend until smooth, if mix seems to wet to roll into balls, add a little more coconut flour. Roll into balls and set in the freezer while you make the white chocolate.
In a double boiler (small saucepan filled with water over medium heat with a larger bowl over the top - without the water touching the bowl) melt the Power Super Foods Cacao Butter until it turns into a liquid, then add the coconut oil and maple syrup. once combined, refrigerate for 20 minutes. Take the really cold maqui bowls and insert a skewer in the centre, dip the balls into the white chocolate, lay on a tray with baking paper and allow to set in the freezer. Repeat process until all the balls are coated.
