Maca Zucchini Bread


Makes 2 loafs
Scant 1 cup Maca Powder
2 eggs
2 cups whole wheat flour
1 cup milk of choice
1 cup Sustainably Sweet Coconut Sugar
1/2 cup applesauce
1 tsp baking soda
1 tsp vanilla extract
1 tsp baking powder
1 tsp cinnamon
3/4 cup raisins or currants
1/2 tsp nutmeg
1/2 cup pecan/walnut or almond
2 cup grated zucchini (3-4 small)

Optional: 2 Tbsp molasses

NOTE: Vegans substitute eggs for 1 Tbsp Egg Replacer mixed with 4 Tbsp water

Preheat oven to 180 C.

In a large bowl, combine dry ingredients, mix in fruit/nuts, then make a well in the centre.

In another bowl, beat eggs, then stir in rest, folding in zucchini last.

Add wet ingredients to dry ingredients until just blended. Oil 2 loaf pans, and bake 30-40 minutes, or until tester inserted in centre comes out clean.

Cool 10 minutes, turn out.

THIS IS DELICIOUS for breakfast, lunchbox, quick afternoon snacks or with a cuppa. Mmmmmmmm....
