Acai Berry Pop Tarts

These Pop Tarts are gluten free, dairy free, refined sugar free.

Makes 6 Pop Tarts

Crust Ingredients:

1.5 cups of oat flour
1/2 cup porridge (you can also just use 2 cups of oat flour)
2 tbsp. coconut sugar
1 tbsp. agave syrup
2 eggs

Berry Jam Ingredients:

6 tbsp Chia seeds
1 tbsp Acai Berry Powder
1 cup organic apple juice
2 tbsp agave syrup
2 cups of raspberries


Crust Method:

Blend the oats in the food processor to make a flour.
Then combine the porridge and coconut sugar in.
Fold in the agave syrup and eggs until a pastry dough has formed.
Wrap in glad wrap and put in the freezer for 10 minutes.
Turn dough onto a floured surface, shape into a disc, and then use a rolling pin to roll into a large rectangle.
It is helpful to place a sheet of plastic wrap over the dough while rolling to reduce cracking. 
Cut into 12 equal squares and carefully transfer each to the baking sheet.

Berry Jam Method:

Mix chia seeds and apple juice together.
Put in a jar and store in the fridge until the chia seeds start to absorb the juice and the mixture become thick.
Blend raspberries, acai powder and agave until almost smooth.
Once chia mixture has thickened, mix the raspberry mixture through thoroughly.
Store in the fridge for up to a week.

To finish:

Place about 1 Tbsp of filling onto 6 of the squares, leaving a border to seal the edges. 
Top the squares with their matching halves and then seal lightly with a fork. 
Bake for 15-20 minutes, or until golden brown. 
Let cool for a few minutes, then top with jam if desired.
