Tigernut Peanut Butter Cookies

GLUTEN FREE
Ingredients:
1¼ cup Power Super Foods Tigernut Flour
½ cup natural, smooth peanut butter
2 tbsp pure maple syrup
2 tbsp coconut oil
1 egg
Pinch of Power Super Foods Peruvian Pink Salt
Method:
1. Line a large baking tray with baking paper and pre-heat your oven to 160°C.

2. Pour the tigernut flour into a large bowl with the salt. Set aside.

3. In a separate bowl, combine the peanut butter, maple syrup, coconut oil and egg until well combined.

4. Add the wet mix to the tigernut flour and mix well until a smooth dough has formed.

5. Take heaped tablespoons of the dough and roll into balls before placing on your tray and pressing the top down slightly with a fork. (Wet your hands with cold water to stop the dough sticking, and dip the fork in flour or coconut oil if it is sticking to the cookies).

6. Bake at 160°C for 15-20 minutes, or until they start to golden around the edges.

7. Allow to cool completely before eating.
