Spiced Chocolate Sweet Potato Muffins + Candied Walnut Butter

Ingredients:

3/4 cup coconut milk, room temperature
2 tsp apple cider vinegar
2 flax eggs (2 tbs flaxseed meal + 4 tbs water)
1/3 cup raw coconut sugar
1/2 cup pure maple syrup
2 tsp vanilla extract
1/2 cup coconut oil, melted
1 cup sweet potato puree
2 1/4 cups white spelt flour
1/4 cup raw Cacao Powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg, ginger & cloves
1/2 tsp ground ginger
1/2 tsp Peruvian Pink Salt
1/2 tbsp aluminium free baking powder

Method:

Preheat oven to 170C
Whisk together the apple cider vinegar and milk. Set aside for 5 minutes.
Whisk together the flax eggs, coconut sugar, and maple syrup until fully incorporated.
Add the vanilla, coconut oil, almond milk/vinegar mixture, and sweet potato.
Mix well until completely smooth.


In another bowl whisk together the flour, spices, salt, and baking powder.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Grease muffin liners, and pour 1/4 cup of batter into each liner.


Bake for 16-18 minutes.
Allow to cool and enjoy! 


 


Topping... Candied Walnut Butter


Simply mix some walnut butter with maple syrup and cinnamon to tast and ice your muffins. Top with a walnut.
