This recipe is an antioxidant superdooper blast! with all the additional antioxidant benefits of lycopene from tomatoes, quercetin from onions, VitaminE in olive oil, thymol and carvacrol from herbs, and selenium in garlic. (Consider using all-organic ingredients for maximum nutritional boost).
Method:
dice a large red onion and sauté in olive oil on medium heat until softer
dice 1 to 3 garlic cloves (to taste) very finely and add, stirring 1 minute
add 2 cans (400 ml) of diced tomatoes; turn heat to simmer
add 1 tsp
Peruvian Pink Gourmet Salt, 1 Tbsp Coconut Sugar, & 1 Tbsp apple cider vinegar (or red wine)
sprinkle Thyme and Oregano herbs (either 1tsp dried or 1 Tbsp fresh chopped)
blend until smooth (optional), then stir in 2 Tbsp
Superblast:antioxidant powder
Optional: at stage 4, add ½ tsp dried chilli flakes for extra kick
