Immune boosting avocado sauerkraut toast with pink lemon cashew cheese

Serves 4
Ingredients:
Toast:
4 slices sourdough toast
1 avocado
Pink lemon cashew cheese (recipe below)
Salt and pepper
Store-bought unpasteurised Sauerkraut
Sprouts, hemp seeds or fresh mint leaves to top

Pink lemon cashew cheese:
1/2 cup raw cashews, soaked in filtered water for 4 hours
2 tablespoon lemon juice
1 1/2 teaspoons Power Super Foods Booster Blend Immunity
2 teaspoon extra virgin olive oil


Method:
Toast:
Toast sourdough as desired, then spread liberally with pink lemon cashew cheese and top with avocado, seasoning and sauerkraut.

Pink lemon cashew cheese:
Drain cashews and rinse well.
Add cashews and remaining ingredients to a high-speed blender and blend until very smooth and creamy, scrapping down the blender sides as needed.
Serve in a glass jar in the fridge for up to 1 week, or use immediately.
