Raw vanilla bean flan with gingerbread crust

1 cup almond meal


1 1/2 cup rolled oats, ground into a flour


1/2 cup coconut flour


1 tbsp Power Super Foods Maca Powder


1 1/4 cup Medjool dates, pitted


1/2 cup psyllium husks


2 tsp ground ginger


1/2 tsp ground cinnamon


1/8 tsp nutmeg


 


Flan


Chocolate layer


1 cup raw cashews, soaked for 4 hours then drained and rinsed


1/4 cup coconut cream


1 tsp vanilla extract


1/4 cup and 2 tsp Power Super Foods Cacao Butter (melted over a hot water bath*)


Pinch of Power Super Foods Peruvian Salt


1 tbsp Power Super Foods Raw Cacao Powder


1/4 cup rice malt syrup or pure maple syrup


 


Vanilla layer


1 cup raw cashews, soaked for 4 hours then drained and rinsed


1/4 cup coconut cream


2 tsp vanilla extract


1/4 cup and 2 tsp Power Super Foods Cacao Butter (melted over a hot water bath*)


Pinch of Power Super Foods Peruvian Salt


1 tbsp fresh lemon juice


1/4 cup rice malt syrup or pure maple syrup


 


Toppings (to serve)


1 cup fresh berries


1 tsp Power Super Foods Cacao Crunch


1 tsp Power Super Foods Goji Berries

Method:

Method


Crust


1. Add Medjool dates to a high-speed food processor and pulse until the dates have formed into small chunks.


2. Add almond meal, oat flour, coconut flour, Power Super Foods Maca Powder, psyllium husks and spices into the processor. Pulse until well combined.


3. With the food processor running, slowly drizzle in the melted cacao butter. Once combined, turn off the processor.


4 Press the mixture evenly into a large flan tin (preferably with a removable base), making sure to take your time to ensure the crust is even. Set aside to rest.


Chocolate layer


1. Add all ingredients except for the Power Super Foods Cacao Butter to a high-speed blender. Blend on high until very smooth. Once smooth, add Power Super Foods Cacao Butter and blend for a further 30 seconds. 


2. Pour mixture onto the flan base and set in the freezer for 30 minutes.


Vanilla layer


1. Add all ingredients except for the Power Super Foods Cacao Butter to a high-speed blender. Blend on high until very smooth. Once smooth, add Power Super Foods Cacao Butter and blend for a further 30 seconds. 


2. Pour mixture onto the chocolate layer and set in the freezer for at least 2 hours.


To serve


1. Remove the flan from the freezer and allow to defrost for 15 minutes. Decorate with fresh berries, Power Super Foods Goji Berries and Cacao Crunch. Serve immediately, or set in the fridge to serve later. 


Notes


* To melt Power Super Foods Cacao Butter, you must grate it and place in a heat-proof bowl. Place the heat-proof bowl over a gently simmering bowl of hot water. Once melted, remove the heatproof bowl and set aside to cool for 5 minutes before using.
