Salted Caramel Peanut Butter Donuts

VEGAN

Donuts (Makes 12)
Ingredients:

Wet mixture:


2 tablespoons of peanut butter
2 tablespoons of vanilla essence
5 tablespoons of coconut oil 
½ cup of water



Dry Mixture:


2 tablespoons of ground cinnamon
½ teaspoon pink Peruvian Pink Salt
½ cup of Coconut sugar
¾ cup of wholemeal spelt flour
½ teaspoon of baking powder



Peanut Butter Glaze:


½ cup of icing sugar
2 tablespoons peanut butter
1 teaspoon vanilla essence
2 tablespoons of vanilla sweetened almond milk




Caramel Drizzle:


½ cup of soaked pitted dates
1 teaspoon of ground cinnamon

Method:

Donuts:


1. Preheat the oven to 180 degrees while you prepare the donut mixture. Grease your donut pan with coconut oil.
2. Place all dry ingredients into a bowl making a well in the centre for the wet mixture.
3. Microwave the coconut oil, peanut butter, water and vanilla essence until a runny consistency.
4. Place the wet mixture into the well of the dry mixture and mix well with a wooden spoon, ensure you don’t over mix!
5. Place mixture into the donut pan and place in the oven for approximately 13 minutes or until a skewer comes out clean. 
6. Leave the donuts to cool for approximately 10 minutes while you prepare the glaze and caramel drizzle.


 


Peanut butter glaze:


1. Place the icing sugar into a bowl making a well in the centre. 
2. Microwave the peanut butter, vanilla essence and almond milk until smooth and runny. 
3. Place the mixture into the well of the icing sugar and mix well until no lumps are visible. Add some more almond milk if the mixture is too thick. 
4. Dip the cooled donuts into the mixture and set aside for the caramel drizzle and popcorn!



Caramel Drizzle:


1. Soak the pitted dates in boiling water for approximately 10-15 minutes. 
2. Once soaked, drain about half of the water out.
3. Place the soaked dates and half of the remaining water into a blender or food processor until smooth and runny. 
4. Place mixture into a zip lock sandwich bag cutting a small angled edge on the bag. Drizzle mixture over donuts and decorate with organic popcorn!
