Choc Cheesecake with Cherry Chia Jam

Ingredients:

Base:


½ cup of Almonds
½ cup of Soaked Pitted Dates
1 teaspoon of Ground Cinnamon


Cheesecake Layer:


2 cups (400grams) of Soaked Cashews
1/3 cup of lime juice (Can use lemon juice)
2/4 cups of Rice Malt Syrup
1 capful of Vanilla Essence
1/3 cup of Melted Coconut Oil
1 teaspoon of Ground Cinnamon
1/3 cup cacao powder for the chocolate layer


Cherry Chia Jam:


1 cup of cherries (if using frozen cherries allow them to thaw out first)
2 tablespoons of chia seeds
1 teaspoon of Ground Cinnamon
2 tablespoons of water
1-2 tablespoons of rice malt syrup (depending on how sweet you like it)

Method:
Base:

1. Soak the pitted dates in boiling water for approximately 10-15 minutes or until soft and easy to break apart.
2. In a food processor blend together the almonds, ground cinnamon and soaked dates. Process until the mixture becomes sticky.
3. Place base into a lined baking tin and make sure to press the mixture down evenly and firm along the base of the tin.
4. Place into the fridge to set while making the cheesecake layer.

Cashew Layer:

1. Soak cashews in a bowl of boiling water for 6-8 hours (ideally overnight). This will ensure they are creamy and soft when you blend them.
2. Drain the cashews and place into a food processor along with the limejuice, vanilla essence, cacao powder and ground cinnamon. Process until combined and creamy.
3. Add the rice malt syrup and coconut oil to the mixture and process until creamy and thick.
4. Place the mixture onto the base and spread evenly with a cake spatula. Then place into the fridge and it will be ready to serve in approximately 1-2 hours. (Alternatively, you can place it in the freezer for about 30 minutes to set faster)
6. Top with cherry chia jam, coconut or fresh cherries.

Cherry Chia Jam:

1. Over a saucepan bring the cherries, water and rice malt syrup to a simmer, mash the cherries with a fork until you reach your desired consistency, depending on how thick you like your jam!
2. Allow the cherries to simmer for approximately 2-3 minutes.
3. Remove the saucepan from the heat and proceed to stir in the chia seeds.
4; Allow the mixture to cool and thicken for approximately 8-10 minutes before placing onto of the chocolate layer.
