Chocolate Teff Crepes

Ingredients:

Dry:
1 cup teff flour
1 tsp baking powder
3 Tbsp coconut flour
2 Tbsp cacao powder
1 Tbsp coconut sugar


Wet:
1 cup plant milk (soy,almond etc)
1 very ripe banana
1 - 2 tbsp water

Method:
Combine all dry ingredients together in a bowl.
Place all wet ingredients into a blender and blend until smooth and creamy, add the 'banana milk' to the wet ingredients and stir to combine.
Heat a non stick pan over a moderate heat, add enough crepe batter to coat the base of the pan, cook the crepe until bubbles form on the surface, then flip over on the other side to cook for a further 2 minutes.
Add your favourite toppings to serve! Enjoy!
