Paleo Protein Pancakes

Serves 4
Ingredients:
1 cup almond or hazelnut meal flour
1/2 tsp baking soda
1/4 tsp Peruvian Pink Gourmet Salt
1 Tbsp full fat coconut milk
1 Tbsp honey
1/2 tsp of vanilla extract
zest of 1/2 a lemon
2 large organic, free-range eggs
1 Tbsp coconut oil for frying in pan
Method:
Combine dry ingredients first, except the lemon zest, in one bowl and in another bowl, mix the wet ingredients.

Then combine wet with dry ingredients. Fold in lemon zest.

Fry in small portions in the pan. These are very delicate pancakes so cook them one at a time and in smaller sizes so they're easier to flip.

Serve warm with organic maple syrup and shredded coconut.
