Citrus and Poppy seed porridge with raspberry chia jam and nut butter

Serves 2, or 1 very hungry person
Ingredients:
Porridge:
1 cup rolled oats
3 cups filtered water
1 tablespoon poppy seeds
Zest and juice of 1 lemon
2 teaspoons Power Super Foods Booster Blend Immunity
Pinch of salt

Toppings:
1 tablespoon raspberry chia pudding (recipe below)
Handful of fresh or frozen berries
1 tablespoon nut butter

Raspberry chia jam (will make about 2/3 cup):
2 cups raspberries
1 tablespoon lemon juice
1 tablespoon water
1/2 teaspoon vanilla extract
1 tablespoon Power Super Foods Organic Chia Seeds
Method:
Porridge:
Add all ingredients (except toppings) to a saucepan and allow to sit overnight.
In the morning, cook the oats over a low flame for 10-15 minutes, stirring continuously and adding more water where needed.
Once smooth and creamy, turn off the heat and serve immediately with the raspberry chia jam, fresh berries and nut butter toppings

Raspberry chia jam:
Add all ingredients to a saucepan and cook over a low heat, stirring continuously for 10 minutes, or until thickened.
Store jam in a clean glass jar in the fridge for up to 1 week.
