Healthy Vegan Avocado Chocolate Tart

Ingredients:

Base:
1 cup of Rolled Oats
1 cup of shredded coconut
1 cup of Soaked Pitted Dates
1 tsp of Ground Cinnamon
1 Capful of Vanilla Essence
¼ cup of Melted Coconut Oil


Chocolate Layer:
2 Ripe Avocados (Roughly 2 cups)
½ cup of Power Super Foods Cacao Powder
2 capfuls of Vanilla Essence
2 tbsp of Ground Cinnamon
2/3 cups of Rice Malt Syrup

Method:
Base Layer:

1. Soak the pitted dates in boiling water for 10-15 minutes until soft and easy to break apart.
2. In a food processer place the oats, coconut, cinnamon and vanilla essence. Process until combined.
3. Add the soaked dates to the oat mixture and process until the dates are completely broken down.
4. Add the coconut oil to the mixture and process until the mixture becomes sticky.
5. Finally take the mixture and place it into a lined baking tin and spread evenly. Make sure to pack the mixture down firmly along the base and sides of the baking tin.
6. Set the base in the fridge while you prepare the chocolate layer.


Chocolate Layer:

1. Cut the 2 ripe avocados and place into a food processor along with the cacao powder, cinnamon and vanilla essence. Process until all ingredients are thoroughly mixed together.
2. Add the rice malt syrup and process until the mixture is combined and fluffy.
3. Take the base out of the fridge and place the chocolate layer evenly over the base. Smooth over with a cake spatula and set in the fridge for approximately 1-2 hours before serving.
4. Top with mixed berries, coconut and Power Super Foods Cacao Nibs.
