Maca-nana Blueberry Muffins - The Family Kitchen Essential

 

Muffins are everyone’s favourite go-to snack, naughty breakfast or lunch time treat!

 

These good old treats are everywhere! From the healthiest cafe’s to the most popular fast food chain. Unfortunately, not all are as healthy and nourishing as we like.

 

Well welcome to my family kitchen essential, the Maca-nana Blueberry Muffin, or as my family like to call them, the Bluffin Muffins! These devilishly sweet treats will leave you feeling nourished and energised rather than with the classically associated muffin top!!

 

To make this recipe a little bit special I’ve included PowerSuper Foods Maca powder, this hidden superfood is an excellent way to get extra vitamins, minerals, enzymes and essential amino acids into your families diet.



 

Maca is a powerful Peruvian root vegetable. Although a humble relation of the radish, maca is streaks above it’s cousin in performance, endurance and let’s be honest - taste too!

 

Silky smooth butterscotch undertones this vegetable is not easily forgotten. Grown at 4,000m above sea level in the Andean district of Junin by the Pumpush people who have been cultivating and consuming Maca as a staple food for thousands of years. This wonderful malty powered vegetable has stood the test of time.

 

Warmed with milk the reminiscence of Horlicks runs through the air. But with an abundance of health boosting attributes it’s no wonder this vegetable is a firm favourite amongst health guru’s.

So whether this is your first time using this superfood, or you’re a season ticket holder to the harvested veggie, this recipe is a wonderful way to include an abundance of nutrients to your diet.

 

Whipping up a batch of these muffins on the weekend means they’re on hand whenever your family needs them, just make sure to hide a few away for yourself otherwise you won’t have a chance to get your paws on the goods!

 

Say goodbye the store bought muffins, sugar crazed kids and never-budging spare tyre and make a start to a healthy family and you with these Maca-nana Blueberry Muffins!

 



Maca-nana Blueberry Muffins

 Makes 10

Ingredients

  

1/3 cup melted coconut oil

2 tbsp honey

2 eggs

2 bananas

1/4 cup of nut milk

1 tsp baking soda

1 tsp vanilla

Pinch of Peruvian Pink salt

1/2 tsp cinnamon

100g buckwheat flour

50g almond flour

50g oats

2 heaped Tbsp Maca Powder

Frozen blueberries

 

Method

1)    Preheat oven to 180 degrees

2)    Place all liquid ingredients together in a large mixing bowl and whisk until well combined

3)    Now slowly start to add the dry ingredients one at a time.

4)    Whisk until throughly combined.

5)    Grease a muffin tray(i like to use silicon muffin cases so they easily pop out!)

6)    Place a few blueberries at the bottom of the muffin cases, spoon in the mixture, placing more blueberries between spoonfuls

7)    Finally place a slice of banana on top of the filled silicon cases and sprinkle with cinnamon

8)    Place in the oven for about 30 mins until the muffins have puffed up and gone golden brown

9)    Now remove from the oven and enjoy!

 

Will keep in an airtight container for 3 - 4 days.

 

Bare Nude Tip: Whip up some cashew nut butter and strawberry chia seed jam and spread generously on muffin!
